RAISING OUR CATTLE
The NV Premier Dry Aged Black Angus Beef Collection is a top quality, fine steakhouse style collection. The cattle in this collection are grass raised which graze in pastures until the 120 day finishing program begins. The finishing program contains natural feeds, such as alfalfa hay, apples and grain resulting in marbled high quality meats. The wet, natural feed ration allows for a slower growth process that is good natured to cattle health. Some even say the unique apple feed ration results in a hint of apple taste in the meat, you can be the judge!
The 3V Grass Fed Black Angus Collection provides an exceptional product with a distinct and great taste. Our cattle are on a strict diet of greens, greens as in grazing pastures which results in a great grass fed meat. This meat is lean with an outstanding taste.
THE AGING PROCESS
The NV Premier Dry Aged Black Angus Beef Collection is dry aged for 21 to 30 days. This is an optimal time to allow enzymes naturally present in the meat to break down the muscle tissue, resulting in improved texture and flavor.
The 3V Grass Fed Black Angus Collection is generally dry aged for less than 10 days. As grass fed beef is very lean, dry aging grass fed beef for longer than 10 days can dry out the meat. Therefore, the grass fed beef aging process is monitored daily to ensure just the right amount of days aged for a perfect grass fed meat.
FRESHLY FROZEN PACKAGING
After the aging process, our meat is immediately cut and packaged by vacuum sealing. This ensures that maximum flavor is maintained and the meat is "freshly frozen" immediately after packaging. This technique seals in all the flavors in the meat unlike general grocery store packaging.
USDA CERTIFIED AND SAFE
The cut and vacuum sealing process is completed through a local small business where all meat is inspected and stamped certified by the USDA's Food Safety and Inspection Service and the Agriculture Marketing Service to assure your families food safety.
CONVENIENT, FRIENDLY FAMILY DELIVERY
In true farm to table fashion, Valencia Beef will provide free delivery to your front door. Deliveries will be arranged for Friday, Saturday or Sunday to ensure you are home to receive the freshly frozen delivery!
